Each vintage is a blend of two-year-old lambic with nine different indigenous grape pomaces from Piedmont. Before blending, the grapes undergo a 9-month pellicular maceration, giving the beer its distinctive complexity. The result is a fruit-forward lambic with notes of fresh grapes, apricot, citrus, and a honeyed floral finish, balanced by Cantillon's signature funk and dry acidity.Because grape harvests differ each year, every vintage of Le Plaisir has its own character, making this vertical especially interesting for collectors who want to compare and contrast the different releases directly.
